What is Agedashi Tofu?

Ingredients

800g Firm Tofu (2-3cm thick cut)

50g Potato Starch (for dusting)

1L Oil for Deep Frying (limited to pot size)

300ml Water

½ Tsp Dashi Powder
-
2 Tbsp Kikkoman Soy Sauce
-
2 Tbsp Mirin
-
1 Tsp Sugar
-
1 Leaf of Spring Onions (chopped)

20g Grated Ginger
-
100g Daikon Radish (grated)

1 Sprinkling of Bonito Flakes

Directions
Slice the tofu into your preferred portion sizes (ideally 2cm cubes at around 3x5cm each) and dab them dry
with a paper towel.Leave the tofu on the towel for around 10 minutes to remove excess water.
Heat the oil in a deep pot (approximately 170 degrees Celsius or medium heat)
Lightly dust the tofu pieces with the potato starch completely coating them and place them into the hot oil.
Continue to deep fry the tofu pieces until the outside is crispy and then leave to drain on a separate tray.
In a separate pot, bring the sauce ingredients to a boil point.
Place the now fried tofu in a deep bowl, pour the sauce over them and finish with a light garnish arrangement.
